BASIC BRT LEG OF LAMB

Ingredients for 12 Servings

17 lbs BRT American lamb leg (may be pre-seasoned) (BRT's run 6-6 1/2 pounds ea.)
Salt and pepper tp taste

Procedure:

1. Pre-heat oven: 450 degrees, rack in middle or pre-heat the rotisserie.
2. Prep the BRT leg: Bring roast to room temperature and lightly oil and rub with salt and pepper.
3. Roast or rotisserie the BRT:
4. Roast in oven for 10 minutes and then turn temperature down to 350 degrees and finish roasting lamb.
5. Medium rare: 21-24 minutes per pound to an internal temperature of 145-150 degrees.
6. Let roast rest, loosely covered, for 5 minutes so that the internal juices are reabsorbed into the meat cells.
7. Same procedure for rotisserie roast except the cooking time will roughly double,
   depending on how hot the heat source is and the distance of the roast from the flame.
