BACON AND BANANA IN PARSNIP

Ingredients for 4 Servings

4 med Sized parsnips
3 Rashers lean bacon, finely chopped
2 Spring onions, sliced
1/4 cup Lemon juice
1/4 cup Maple syrup
2 Bananas, sliced

Procedure:

1. A fresh and bold taste sensation!
2. Great by itself or with lightly cooked fresh greens or a crispy salad.
3. Try this wonderful combination in kumaras or potatoes too!
4. Wash the parsnips, peel only if necessary.
5. Bake, boil, microwave, steam until tender.
6. Keep warm while preparing the 'stuffing'.
7. Using a non-stick pan saute the bacon in a little water until cooked and golden brown.
8. Add the spring onion, lemon juice and maple syrup.
9. Saute briefly until the sauce gives a glossy coating.
10. Remove from the heat and add the banana slices. Stir gently.
11. Cut the parsnips in half lengthways, almost to the base, and spread apart.
12. Spoon the banana mixture into the cut parsnip
