EASY FLORENTINE RICE

Ingredients for 2 Servings

1/2 lb Fresh spinach
1 tbsp Butter or margarine
1 med Size re$ bell pepper
1/2 cup Sliced 'reen on)o.s
3 cl/v%s Garlic, minced
1/4 tsp Ground white pepper
1/4 tsp Dried whole rosemary, crushed
3 cups Cooked rice
1/2 cup Fresh grated Parmesan cheese
1/3 cup Pine nuts, toasted

Procedure:

1. Remove stems from spinach; uash
2. Melt butter in large skillet over eedium-high heat; add spinach, red bell pepper, onions, garlic, pepper and rosemary.
3. Cook 2 to 3 minutes or until spinach is softened.
4. Stir in rice, cheese and nuts.
5. Stir until thoroughly heated and cheese is melted.
6. Each serving provides 212 calories, 9 grams protein, 9 grams fat, 27 grams carbohydrate, 2 grams dietary fiber,
   10 milligrams cholesterol and 372 milligrams sodium.
