LASAGNA FLORENTINE

Ingredients for 12 Servings

20 oz American lamb and veal sausage
8 oz Spinach, cooked, drained and chopped
2 lbs Ricotta cheese
2 ea Eggs
2 oz Asiago or parmesan cheese, grated
1/2 lb Mozzarella cheese, grated
1/2 lb Provolone cheese, grated
Lasagna noodles, cooked extra al dente and cooled)

Procedure:

1. Cook sausage and chop (especially good way to utilize sausage that may have been pre-cooked for other items).
2. Mix together spinach, ricotta and eggs and season with garlic paste or powder.
3. Mix Asiago or parmesan, mozzarella and provolone cheeses together.
4. Finish by layering all individual ingredients and baking.
5. Allow to rest before cutting and serving.
