HUNGARIAN LAMB PAPRIKASH

Ingredients for 48 Servings

12 lbs American lamb leg or shoulder, cut into lean 3/4-inch cubes
1 1/2 oz Aprika, sweet
2 quarts Water, beef or chicken stock
1 tbsp Salt
2 tsp Black pepper
2 lbs Onions, cubed
5 lbs Carrots, cubed
12 oz All-purpose flour
1 quart Water
3 lbs Noodles
1 oz Poppyseeds

Procedure:

1. Brown lamb cubes in oven.
2. Dust cubes with paprika.
3. Braise in a kettle with water or stock, salt and pepper until tender, about 2 hours.
4. Add additional water as necessary.
5. Skim fat.
6. Cook the onions and carrots separately in a steamer.
7. Add onions and carrots to the lamb.
8. Make a slurry with the flour and water.
9. Add to the stew and cook until thickened.

15. For Hungarian Lamb Stew, thin the Paprikash with stock; add steamed,
    diced celery and parsley and delete the yogurt.
