Ingredients for 4 Servings

1 Loaf French bread (8 ounces, about 15 inches long)
2 Roasted red peppers, cut into strips
1/2 med Cucumber, sliced
1/4 cup Thinly sliced red onion
2 small Tomatoes, sliced
2 oz Crumbled reduced-fat feta cheese
4 Leaves romaine lettuce
Kalamata or ripe olives, as garnish
Hummus (recipe follows)
15 1/2 oz Can of garbanzo beans OR
1 1/2 cups Cooked dry-packaged Garbanzo beans, rinsed, drained
2 tbsp Lemon juice
1 tbsp Olive oil
1 tsp Minced garlic
1 tsp Dried oregano leaves
Salt and pepper, to taste

Procedure:

1. Slice bread in half lengthwise.
2. Spread bottom half of bread with Ummus.
3. Layer with roasted peppers, cucumber, onion, and tomatoes and sprinkle with feta cheese.
4. Top with romaine lettuce and top half of bread.
5. Cut sandwich into 4 equal pieces.
6. Garnich with olives.
7. Hummus:
8. Coarsely mash Garbanzo beans.
9. Mix in remaining ingredients, and season to taste with salt and pepper.
