BEETROOT WITH HORSERADISH CREAM

Ingredients for 4 Servings

4 med Beetroot (600g)
1/2 cup Light sour cream
1/2 tbsp Repared horseradish cream
1 tbsp Chopped chives

Procedure:

1. Sweet and mild with a dramatic appearance!
2. Scrub the beetroot, peel only if the skin is very tough.
3. Trim the stalk and root.
4. Arrange the beetroot in a microwave proof dish.
5. Add ´´ cup water, cover and microwave on high power for 10-12 minutes or until the beetroot is tender.
6. Stand 4 minutes.
7. Mix the sour cream and horseradish cream together.
8. Place the beetroot onto a serving plate and make a deep cross-shaped cut into each beetroot and pour the horseradish mixture over.
9. Sprinkle with chives.
