SIRLOIN CITRUS SALAD

Ingredients for 4 Servings

1 lb Beef top sirloin steak, cut 1-inch thick
1 tbsp Olive oil
4 cups Torn romaine lettuce
2 Oranges, peeled and separated into segments
1/4 cup Walnuts, toasted
Sliced strawberries (optional)
2 tbsp Orange juice
2 tbsp Red wine vinegar
1 tbsp Olive oil
2 tsp Honey
1 1/4 tsp Dijon-style mustard

Procedure:

1. Beautiful lunch great light meal.
2. Prepare citrus vinaigrette by thoroughly combining orange juice, red wine vinegar,
   1 Tbsp. of the olive oil, honey, and Dijon-style mustard.
3. Grill steak over medium coals for 13-16 minutes or to desired doneness.
4. Allow steak to stand for 10 minutes then carve into thin slices.
5. Toss lettuce, cooked beef steak and oranges in a large bowl.
6. Sprinkle with walnuts and drizzle with the citrus vinaigrette.
7. Garnish with strawberries if desired.
8. Serve immediately.
9. This salad is equally good made with grapefruit or a combination of oranges and grapefruit.
10. Pine nuts or almonds can be substituted for the walnuts.
11. Steak can also be broiled or stir-fried.
12. Prep: 10 minutes, Cook: 15 minutes
