GREEK-STYLE LOIN ROAST

Ingredients for 8 Servings

3 lb Boneless pork loin roast
1/4 cup Olive oil
1/4 cup Lemon juice
1 tsp Oregano
1 tsp Salt
1 tsp Black pepper
6 cloves Garlic, minced

Procedure:

1. Place pork loin in large ziplock bag.
2. Combine remaining ingredients except Spicy Yogurt Sauce; pour over pork in bag.
3. Seal bag and refrigerate overnight.
4. Remove pork from marinade, discard marinade.
5. Place pork over drip pan on grill.
6. Grill over indirect heat in covered grill until meat thermometer inserted reads 155 degrees F., about 1 to1 1/2 hours.
7. Let rest 10 minutes (internal temperature will rise slightly upon standing) before slicing thinly to serve. Serve with Spicy Yogurt Sauce.
8. Spicy Yogurt Sauce: In small bowl, stir together 1 cup plain yogurt, 1 peeled & chopped cucumber, 1/2 teaspoon crushed garlic,
   1/2 teaspoon crushed coriander seed, 1/4 cup minced red onion and 1/4 teaspoon crushed red pepper.
9. Cover and refrigerate until ready to serve.
10. Preparation Time: 15 minutes
11. Cooking Time: 60 minutes
