TOMATO AND CUCUMBER SALAD

Ingredients for 4 Servings

6 med Tomatoes, sliced into wedges
2 cups Cucumber chunks
1 cup Celery leaves
1 tbsp Cider vinegar
1 tbsp Oil
2 tsp Whole seed mustard
1 tbsp Brown sugar

Procedure:

1. This is a subtle flavoured salad which tastes best when you use the light green leaves from the middle of the celery bunch.
2. Place the tomatoes, cucumber and celery leaves onto a serving platter.
3. Blend the vinegar, oil, mustard and sugar together.
4. Pour over the salad and toss gently just before serving.
