SANTA FE MEAT LOAF

Ingredients for 8 Servings

2 lb Lean ground pork
1 tsp Vegetable oil
1 med. Onions, finely chopped
4 cloves Garlic, crushed
1 ea Jalapeno pepper, seeded and minced (wear rubber gloves when handling hot pepper)
4 tbsp Minced dried tomatoes
1 tbsp Chili powder
1 tsp Ground cumin
1 1/2 tsp Salt
1 tsp Thyme
1/2 tsp Cayenne
1/2 cup Finely chopped parsley
1/2 cup Dried bread crumbs
1/2 cup Skim  milk

Procedure:

1. In large nonstick skillet heat oil over medium-high heat.
2. Saute onions and garlic until soft, about 10 minutes; cool slightly and transfer to large bowl.
3. Add all remaining ingredients and mix thoroughly.
4. Place mixture in a 9 x 4 1/2 x 2 1/2-inch loaf pan and bake in a 350 degree F. oven for 1 1/2 hours.
5. Remove from the oven and allow to rest 10 minutes before removing from pan. Slice to serve warm, or wrap well and refrigerate for sandwiches.
