MARINATED BABY CARROT SALAD

Ingredients for 4 Servings

3 cups Baby peeled carrots
2 cups Cauliflower florets
3 Spring onions, cut into 4 cm lengths (optional)
1 Green pepper, cut into chunks
1/4 cup Wine vinegar
1/4 cup Sugar
1 cup Boiling water
2 cm Piece root ginger, peeled and thinly sliced

Procedure:

1. This tastes wonderful even after a few days. Keep refrigerated.
2. Other vegetables work well in this carrot salad.
3. Lightly boil, steam or microwave the vegetables until barely tender.
4. Stir the vinegar, sugar, water and ginger together until the sugar dissolves.
5. Pour over the vegetables.
6. Allow to marinate if possible.
7. Serve warm or cold.
