BLACK BEAN AND RICE SALAD

Ingredients for 4 Servings

2 cups Cooked rice, cooled to room temperature
1 cup Cooked black beans
1 cup Chopped fresh tomato
1 cup Shredded Cheddar cheese (optional)
1 tbsp Chopped fresh parsley
1/4 cup Prepared Italian dressing*
Lettuce leaves

Procedure:

1. Combine rice, beans, tomato, cheese and parsley in large bowl.
2. Pour dressing over rice mixture; toss lightly.
3. Serve on lettuce leaves.
4. *Any type of salad dressing may be used.
5. Calculations reflect regular Italian salad dressing.
   Each serving provides 245 calories, 7 grams protein, 8 grams fat, 36 grams carbohydrate,
   3 grams dietary fiber, 0 milligram cholesterol and 474 milligrams sodium.
