CLASSIC FRIED CATFISH WITH JALAPENO HUSH PUPPIES

Ingredients for 4 Servings

4 U.S. Farm-Raised Catfish fillets
Cooking oil
1 1/2 cups Yellow cornmeal
1/2 cup All-purpose flour
2 tsp Salt
1 tsp Ground red pepper
1/2 tsp Ground black pepper
1/4 tsp Garlic powder
Jalapeno Hush Puppies
1 cup Self-rising cormeal
1/2 cup Self-rising flour
1 tbsp Sugar
1/2 cup Minced onion
1 tbsp Minced jalapeno
1 cup Milk
1 large Egg, beaten
Cooking oil

Procedure:

1. Rinse fillets.
2. Do not pat dry.
3. Preheat cooking oil to 350°F in heavy skillet or deep fryer.
4. Combine all dry ingredients in shallow dish.
5. Place fillets into cormeal mixture.
6. Coat fillets evenly and shake off excess coating.
7. Fry fillets in hot oil, rounded side down, for 3 to 4 minutes.
8. Turn fillets and cook 3 to 4 minutes.
9. Drain on papper towels.
10. JALAPENO HUSH PUPPIES
11. Combine first five ingredients in bowl.
12. Stir in milk and egg.
13. Preheat cooking oiol to 350°F in heavy skillet or deep fryer.
14. Drop level tablespoon of batter into hot oil.
15. Turning hush puppies frequently, cook until golden brown on all sides, about 3 minutes.
16. Remove with slotted spoon.
17. Drain on papper towels.
18. *If self-serving cormeal is not available, add 2 teaspoon baking powder and 1 teaspoon salt to 1 cup cormeal.
19. Prep Time:   Catfish 5 min, Hush Puppies 5 min
20. Cooking Time:   Catfish 6 to 8 min, Hush Puppies 6 min
