ITALIAN CUPBOARD SOUP

Ingredients for 4 Servings

2 ea Boneless top loin pork chops, cubed
15 oz Can of chopped tomatoes, undrained
14 1/2 oz Chicken broth
2 tbsp Dried minced onion
15 oz Can of cannellini or great Northern beans, drained
8 oz Fresh spinach leaves, torn

Procedure: 

1. In a deep saucepan, brown the pork in a little oil; add all ingredients except spinach; bring to a boil, 
   lower heat and simmer for 15 minutes; stir in torn spinach and cook for 2 more minutes.
2. Top servings with grated Parmesan or Romano cheese.
