ANTIPASTO AVOCADO

Ingredients for 4 Servings

2 Firm-ripe avocado a selection of 'Mediterranean' flavours.
Choose from:
Sundried tomatoes or peppers olives, capers or  anchovies feta or goats cheese, or brie wedges
1/4 cup Vinaigrette or pesto dressing (optional)

Procedure:

1. Sensational! Serve as an elegant lunch, a supper or entree.
2. Halve, stone and peel the avocados.
3. Take a thin slice off the base of each half so they sit flat and arrange on a serving platter.
4. Pile your choice of generously chopped 'fillings' into the centre of and over the avocado halves.
5. Casual nonchalance is the look!
6. Drizzle with the vinaigrette, or a little of the oil from your sun-dried tomato jar.
7. Serve at room temperature, with or without some salad greens and a crusty bread roll.
