MEXICAN CORN AND SHRIMP SKILLET DINNER

Ingredients for 4 Portions

3 tbsp Butter
1 tsp Minced garlic
1 tbsp Fresh lime juice
2 tsp Chili powder
1/2 tsp Dried oregano leaves, crushed
3/4 tsp Salt
1/4 tsp Ground black pepper
4 Ears fresh Supersweet Corn, husked and halved
1 lb Large shrimp, peeled and deveined
2 med Zucchini thinly sliced (about 2 3/4 cups)
1/4 cup Chopped cilantro

Procedure:

1. In a large skillet, melt butter over medium heat.
2. Add garlic; cook and stir until fragrant, about 2 minutes.
3. Stir in lime juice, chili powder, oregano, salt and pepper; cook and stir for 30 seconds.
4. Add corn, shrimp and zucchini, stirring to coat with spice mixture.
5. Add 1/2 cup water.
6. Cook, covered, over low heat until corn and shrimp are cooked, about 6 minutes.
7. Sprinkle with cilantro.
8. Serve with lime wedges, if desired.
