PASTA WITH FRESH SALSA

Ingredients for 8 Servings

1 lb Angel Hair (Cappellini), uncooked
2 pcs Bell peppers (yellow are best; green or red are fine)
2 pcs Jalapeņo peppers
15 pcs Fresh plum tomatoes, such as Romas, chopped
1 large Sweet onion, such as Vidalia, chopped
1/4 cup Lightly packed cilantro, chopped
2 tbsp Lime juice
1/4 cup Olive or vegetable oil
Salt and pepper to taste
1/4 cup Grated Parmesan cheese (optional)

Procedure:

1. Cook pasta according to package directions.
2. While pasta is cooking, roast bell peppers and jalapeņo over an open gas burner or grill or under a broiler until evenly charred.
3. Place charred peppers in a paper bag to cool.
4. When cool, scrape off blackened areas, seed and dice.
5. Combine roasted peppers with remaining ingredients (except cheese) to create the salsa.
6. When pasta is cooked, drain and toss with fresh salsa.]
7. Serve with Parmesan cheese, if desired.
