TORTILLA, CHILE & LIME SOUP

Ingredients for 8 Servings

1 tbsp Vegetable oil
1 cup (1 small) quartered, sliced onion
2 Cloves garlic, finely chopped
8 cups Chicken broth
1 3/4 cups (14.5-ounce can) recipe-ready diced tomatoes, drained
1/2 cup (4-ounce can) ORTEGA® Diced Green Chiles
1/2 cup (about 4) lime juice
1/2 tsp Salt
2 cups (about 4 small half breasts) cooked shredded chicken breast meat
2 cups (about 2 ounces) tortilla chips, broken into pieces
Chopped avocado (optional)
Chopped fresh cilantro (optional)

Procedure:

1. HEAT vegetable oil in large saucepan over medium-high heat.
2. Add onion and garlic; cook, stirring occasionally, for 3 to 4 minutes or until onion is tender.
3. Add broth, tomatoes, chiles, lime juice and salt.
4. Bring to a boil.
5. Reduce heat to low; cook, uncovered, for 8 to 10 minutes.
6. Add chicken; cook for 3 to 4 minutes.
7. LADLE soup into bowls.
8. Top with chips, avocado and cilantro before serving.
